I've always wanted to do an African hunt and it's still the dream although I missed 50! lol

When I looked into it a few years ago it wasn't much more than going to hunt big horn sheep in the mountains. This was for an African package consisting of a bunch of deer species. If you wanted to hunt something more exotic then the costs went way up. August is a good time to go because it's the end of their winter months.

Wolverine Supplies used to setup these hunts with another party. I think they moved away from that when John retired but I bet if you called them someone could put you on to a great guide outfit out there.

August will limit you in North America, but the tail end of it can get you into Caribou, rest of the month will get you into Sheep/Goat only. Outside of that i heard of alot of people doing Ibex hunts and they are much more "affordable"

Texas offers a variety of hunts year round. Arizona has archery Coues deer in August - it's an over the counter tag

I know this is not you meant but when you said Texas I remembered about Heli-Bacon. I think this would definitely qualify as "something different".
